favorite things: salsa

I don't know about you, but self-control is hard to come by when good salsa & tortilla chips are put in front of me!  Not all salsas are created equal, however, and I have certainly been disappointed by some of my grocery store purchases.

Last month it occurred to me that if I would just learn how to make my own salsa, then my problem would be solved!  So I did some research and then some experimenting in my kitchen . . . and have landed on a recipe that is (dangerously) good :)  It's so basic, I don't know why I haven't tried this before - and I like that it leaves room for variation.  Give it a try & let me know what you think!  I would also welcome other tips/recipes . . .

Julianna's homemade salsa
  • 1 (14.5 ounce) can whole peeled tomatoes, drained (or 3 fresh tomatoes)
  • 1/2 cup chopped onion
  • 1 jalapeno pepper, seeded*
  • 1 tablespoon cider vinegar
  • 2 tablespoons lime juice
  • 1/4 cup minced fresh cilantro
  • 1 clove garlic, peeled
  • 1/4 teaspoon salt
In a food processor, combine all ingredients; cover and process until chunky.  (If you don't have a food processor, just chop all the veggies well & then mix with the other ingredients.)  I didn't measure how much this recipe yields, but it's not a large batch.  If you want to share with a group, I would definitely double the above.

 * I used 3/4 of a seeded jalapeno & it gave a decent amount of kick
