favorite things!

So I'm unapologetically stealing a friend's idea and adding a new category of posts to my blog: my favorite things! For the kick-off, I'm going to include a recipe I just tried last night that uses one of my favorite foods - sweet potatoes! (why in the world have I never made these before?!)

Spicy Roasted Sweet Potato Fries

1 T. of olive oil, divided
2 large sweet potatoes
1/4 tsp. salt
1/4 tsp. chili powder (this was very mild - if you like more of a kick, I'd try 1 tsp.)
1 tsp. brown sugar

  • Brush an aluminum foil-lined jelly-roll pan with 2 tsp. olive oil.
  • Heat pan in a 425° oven 5 minutes.
  • Peel sweet potatoes, and cut into 3- x 1/2-inch strips.
  • Combine strips, salt, chili powder, brown sugar, and remaining 1 tsp. oil in a large zip-top plastic freezer bag (or Tupperware container), tossing to coat.
  • Place strips in a single layer in prepared pan.
  • Bake at 425° for 30 minutes or until crisp, stirring every 10 minutes.
